Slow Cooker Korean Beef

I recently purchase the Damn Delicious cookbook.  I made this recipe and it was so tender and flavorful.  I served it over white rice but potatoes would also make a good side. King Ranch Chicken

This is sort of a TexMex version of lasagna.  Corn tortellas are used instead of pasta. The other layers are: 1) Sautéd peppers with corn and black beans seasoned with red pepper flakes, chili powder, and garlic powder.  Add a can of Rotel Tomatoes with Green Chilies. 2) Shredded Chicken 3) Yellow Cheddar Cheese In a casserole dish start with a layer of corn tortellas, layer in a third of the vegetable mix, then half the chicken, and cover with cheese.  Put down another layer of corn tortellas, one third of the vegetables, the rest of the chicken, and cover with cheese.  Put down a final layer of tortellas, the rest of the vegetables, cover with cheese.  Back at 350 for 45 minutes or until brown.

Chicken Divan

Bite size cooked chicken and broccoli spread out in a casserole.  Sauce made from cream, sour cream, mayonnaise with a squeeze of lemon and a little mustard.  Add in some shredded cheddar cheese.  Should cover the chicken and broccoli.  Sprinkle the top with breadcrumbs and Parmesan. Carrot, Lentil & Spinach Soup

This soup was easy to make and good for you.  Under 300 calories per serving but packed with protein.  The prep time for me was more like 25 minutes, so give yourself at least 45 minutes from start to finish.  I couldn't find red lentils, but normal green lentils worked fine. https://www.occasionallyeggs.com/2017/09/carrot-red-lentil-spinach-soup.html

Southern Tomato Pie

Normal pie crust, blind baked.  Filled with layers of tomatoes, onions, fresh basil, salt and pepper each layer.  We used sliced tomatoes but there was some water.  Next time we will only use the meat of the tomato (no seeds).  On top was 1 cup of cheddar, 1 cup of mozzarella and 3/4 cup greek yogurt.

Smoked Baby Back Ribs

rubbed them with chili powder, brown sugar, sugar, smoked paprika, cumin, salt and pepper.  First food from the smoker.  Hickory chips at 225 for five hours,  Not bad for a smoker newbie!  Deb cooked some Yukon Golds to go with it.

Rabbit Stew

Bought a whole rabbit, butchered it, made stew. The stew started with chunks of rabbit rolled in flour and then browned.  Removed the rabbit and sautéed onions, carrots, celery, and potatoes.  Added a cup of red wine and three cups of water, added back the rabbit and a bay leaf, then simmered for about two and a half hours
